HISTORY
Born in Milan but raised in Quarrata, in the province of Pistoia, Manuel showed a great creative talent from a young age, producing intricate and beautiful drawings. This talent was later transferred into the art of pizza making, turning every dish into a masterpiece. In fact, in the dining room of his restaurant, a sign reads: "Once, as a child, I told my mother I wanted to paint the air, but I didn’t know how. Then I understood." From here, the evolution of a story filled with successes began.
Training
A passion that stemmed from the need to help his family after the premature loss of his father. Thus, his passion for drawing shifted to pizza making. In 2014, he became the head pizzaiolo at "La Fenice" in Pistoia, managed by the Tirico family. Later, in 2019, together with Cristiano, the son of the owners, he took over and transformed it into "La Fenice Pizzeria Contemporanea." The venue was completely renovated in 2023, becoming elegant and stylish, with 110 seats available for two evening shifts.
Career
Since 2019, Manuel has managed, "La Fenice Pizzeria Contemporanea" in Pistoia, alongside his partner and friend Cristiano Tirico, marking a period filled with successes. Since 2020, the pizzeria has consistently been included among the top pizzerias in 50 Top Pizza. In 2022, it received the prestigious “Due Spicchi” from Gambero Rosso and was awarded the title of “Best Pizzeria in Tuscany” by Il Forchettiere, along with a victory in the Sky format “Pizza Challenge.” Additionally, Manuel ranked 34th at the "World Pizza Championship" in Parma and received numerous other accolades, including recognition in the “Cento Eccellenze” list by Forbes. He also travels across Italy as a trainer and event guest, representing Mulino Casillo as a brand ambassador.
