Tradition and Innovation

As a young man, Manuel learned techniques for dough fermentation and flour balancing in various pizzerias across Tuscany, where he worked as an assistant pizzaiolo, continually refining his concept of traditional pizza, while closely tied to one word: innovation. All of his products are the result of ongoing research and experimentation aimed at achieving increasingly better results in terms of lightness and digestibility.
